Grape variety:
100% Nebbiolo from MGA 'Sterlotti' in Montà d'Alba (CN).
Farming and planting density:
Guyot, 4900 vines per hectare.
Harvest:
by hand around the beginning of October.
Length of fermentation:
traditional vinification with spontaneous fermentation in wooden vats for about 15 days at 26°C. The grapes are destemmed and undergo soft crushing, then the must is pumped over using the dèlestage system in order to maximise the extraction of colour and varietal aromas. After malolactic fermentation, the wine is placed in Austrian oak barrels for approximately 12 months with regular top-ups of the level and tasting tests in order to guarantee its good evolution as much as possible.
Ageing:
12 months in casks, then in bottles.
